Samhap means three things together: fermented skate, boiled pork and aged kimchi, eaten in a single mouthful. It is Jeolla's defining dish and the hardest one for outsiders - the ammonia is genuinely startling. Mudskipper stew is the other local order. Jangheung is where you eat it properly.
